A biomass which can be used directly as panification fer- ment without previous separation of the culture medium and the biomass and without addition of industrial yeast is prepared by cultivating at least one strain of yeast in a culture medium specified in the description. Preferably, the said ferment com- prises as yeast the strain Saccharomyces cerevisiae steineri DSM 9211.

Biomasse pouvant être utilisée directement comme ferment de panification sans séparation préalable du milieu de culture et de la biomasse et sans addition de levure industrielle; elle est préparée par culture d'au moins une souche de levure dans un milieu de culture spécifié dans la description. Comme levure, le ferment comprend de préférence la souche Saccharomyces cerevisiae steineri DSM 9211.
