The present invention relates to a process for preparing a flavour concentrate, involving the steps of: (a) mildly oxidising triglyceride fat, and (b) hydrolysing the triglyceride fat to a degree of hydrolysis exceeding 10%. It was found that flavour concentrates of improved quality are obtained if prior to or simultaneously with the hydrolysis of triglyceride fat, said fat is mildly oxidised.

Méthode pour prépare un concentré d'arôme, comprenant les étapes suivantes : a) légère oxydation d'un corps gras de type triglycéride; b) hydrolyse du triglycéride jusqu'à un niveau d'hydrolyse dépassant 10 %. On a observé qu'il était possible d'obtenir des concentrés arômatiques de meilleure qualité si, avant l'hydrolyse ou en même temps que l'hydrolyse du triglycéride, on l'oxydait légèrement.
