The invention relates to a process for preparing a noncrystallizable polyol syrup stable to heat and to alkaline medium, using a step of hydrogenation of a sugar syrup and a step of caramelization of the hydrogenated sugar syrup, characterized in that the hydrogenated and caramelized sugar syrup is subjected to purification on ion--exchange resins, the said purification comprising at least one passage over a strong cationic resin at a temperature of less than 50°C, the said temperature being chosen according to the level of reducing sugars desired in the noncrystallizable polyol syrup. It also relates to the use of the polyol syrup obtained for the preparation of toothpastes.

L'invention porte sur un processus de préparation d'un sirop aux polyols non cristallisable stable à la chaleur et de milieu alcalin, en utilisant une étape d'hydrogénation d'un sirop de sucre et une étape de caramélisation du sirop de sucre hydrogéné, caractérisées en ce que le sirop de sucre hydrogéné et caramélisé est soumis à une purification sur résines échangeuses d'ions, ladite purification comprenant au moins un passage sur une résine cationique forte à une température inférieure à 50° C, cette température étant choisie en fonction du taux de sucre réducteur souhaité dans le sirop aux polyols non cristallisable. Cette invention touche également l'utilisation du sirop aux polyols obtenu pour la préparation des dentifrices.
