A process for preparing a shellfish product comprises vacuum packing the shellfish while alive, and heating the vacuum pack containing the shellfish for sufficiently long to pasteurise the shellfish at a pressure which substantially counteracts expansion of the pack, so as to capture the natural juices of the shellfish and seawater within the shells within the pack.

Processus de préparation d'un produit de crustacés ou de coquillages. Ce processus consiste à emballer sous vide le crustacé ou coquillage encore vivant, et à le chauffer assez longtemps pour le pasteuriser à une pression permettant d'éviter essentiellement une expansion de l'emballage, afin de conserver le jus naturel du crustacé ou coquillage ainsi que l'eau de mer à l'intérieur.
