A stable oil containing LC-PUFAs in the form of triacylglycerols, in particular arachidonic acid (ARA), dihomogammalinolenic acid (DHGLA), docosahexaenoic acid (DHA) or eicosapentaenoic acid (EPA), may be prepared by direct pressing of one or more biomasses obtained from the culture of a microorganism, especially of a fungus or of a microalga containing the acids ARA, DHGLA, DHA or EPA leading to a first press oil and by bringing a carrier oil entering into the composition of a foodstuff, a cosmetic or pharmaceutical product, into contact with the biomass cake, followed by pressing leading to a second press oil, and then by combining the pressed oils and refining the mixture under controlled conditions.

L'invention concerne une huile stable contenant des acides gras polyinsaturés à chaîne longue sous forme de triacylglycérols, en particulier de l'acide arachidonique (ARA), de l'acide dihomogammalinolénique (DHGLA), de l'acide docosahexaénoïque (DHA) ou de l'acide eicosapentaénoïque (EPA), pouvant être préparée selon une technique consistant à soumettre à une première pression une ou plusieurs biomasses produites par culture d'un microorganisme, plus précisément d'un champignon ou d'une microalgue contenant les acides ARA, DHGLA, DHA ou EPA, pour obtenir une huile de première pression, à mettre une huile support entrant dans la composition d'un produit alimentaire, cosmétique ou pharmaceutique en contact avec le tourteau de biomasse, à effectuer une seconde pression pour obtenir une huile de seconde pression, à mélanger les huiles de première et de seconde pression et, enfin, à raffiner le mélange dans des conditions contrôlées.
