The invention relates to a process for the preparation of foodstuffs such as, for example, chipped potatoes, in a hot air oven with a steam phase and a roasting phase, comprising the following steps: heating a refining chamber to a required temperature, introducing the material for refining into a basket rotatable in the refining chamber, switching on a basket-rotating drive, switching on a hot air fan, reheating the refining chamber, refining the material in the refining chamber, part of the water contained in the material passing into the refining chamber and creating an atmosphere of increased moisture (steam phase), exchanging the atmosphere for relatively drier air (roasting phase ), switching off the heating, fan and basket-rotating drive, the following step also being provided: heating the refining chamber during the steam phase to a higher temperature than the required temperature.

Un procédé de préparation d'aliments, par exemple des pommes frites, dans un four à air chaud avec une phase vapeur et une phase de grillage, comporte les étapes suivantes: on chauffe la chambre de cuisson jusqu'à une température nominale; on remplit de produits à cuire un panier rotatif à l'intérieur de la chambre de cuisson; on met en marche le mécanisme d'entraînement rotatif du panier; on met en marche une soufflante d'air chaud; on chauffe à nouveau la chambre de cuisson. On cuit ainsi les produits dans la chambre de cuisson, l'eau contenue dans les produits cuits parvenant en partie à la chambre de cuisson et produisant une atmosphère à humidité accrue (phase vapeur). On remplace ladite atmosphère par un air relativement plus sec (phase de grillage); et on arrête le chauffage, la soufflante et le mécanisme d'entraînement rotatif du panier. Dans une étape supplémentaire, on chauffe la chambre de cuisson pendant la phase vapeur jusqu'à une température supérieure à la température nominale.
