NBI-492 PROCESS FOR PREPARING LOW-FAT ROASTED NUTS ABSTRACT OF THE DISCLOSURE The present invention relates to a process for preparing low-fat roasted nuts. This process comprises pressing raw redskin nuts with a moisture content of 6% or greater to remove about 40% to about 52% of their oil content and then roasting the nuts. The resulting nuts are low in fat yet retain a significant portion of their flavor-imparting substituents.
