ABSTRACT OF DISCLOSURE Crystalline maltose in good yields is obtained by subjecting a starch hydrolyzate having a maltose content of at least 75% and a viscosity of greater than 400 cps. to the action of glucoamylase, whereby the viscosity is reduced to below 400 cps. without any substantial reduction in the maltose content, and then subjecting the resulting hydrolyzate to a conventional crystallization operation.
