ABSTRACT OF THE DISCLOSURE: The invention relates to a polymeric stabilizer for emulsions of the water-in-oil type, which consists of a poly(.alpha.-amino acid) polymer made of similar or different monomer units of the general formula Image where n has a value ranging from 1 to 4, X is oxygen or a -HN-group, and R is hydrogen, hydroxyalkyl, dihydroxy- or polyhydroxyalkyl or a radical derived from an alkanoic or hydroxyalkanoic acid, where the alkyl has a linear, cyclic or branched aliphatic chain with 1 to 18 carbon atoms, or R is an arylalkyl. This stabilizer can be used in particular for the preparation of microparticles.
