Process is provided for preparing a non-proteinogenic L-amino acid by means of an enzymic biotransformation in which 0-acetyl-L-serine is reacted with a nucleophilic compound, while using an O-Acetyl-L-serine sulfhydrylase as catalyst, to give a non-proteinogenic L-amino acid. The process is carried out at a pH in the range between pH 5.0 and 7.4.
