Whole potatoes are optionally peeled and optionally preheated before cutting into strips. The strips are blanched in water before being dipped in an aqueous solution containing sodium chloride, dextrose and chelating agents. The strips are then blanched in steam before being dried in heated air. The partially dried strips are again treated with steam for a short time to blanch the strips, then parfried in oil, cooled for an extended period, and parfried a second time in oil. The strips are then frozen and packaged, ready for reconstitution by frying, oven or microwave rethermalization.

On pèle, s'il y a lieu, des pommes de terre entières que l'on préchauffe éventuellement avant de les découper en bâtonnets. On blanchit à l'eau ces bâtonnets avant de les tremper dans une solution aqueuse contenant du chlorure de sodium, du dextrose et des agents chélateurs. Puis on blanchit lesdits bâtonnets à la vapeur avant de les sécher dans de l'air chaud. On traite à nouveau à la vapeur les bâtonnets de pommes de terre partiellement secs pendant un court laps de temps, de façon à blanchir les bâtonnets, on les frit à demi dans de l'huile, on les refroidit pendant un laps de temps prolongé, puis on les frit à nouveau à demi dans l'huile. On surgèle enfin et on emballe les bâtonnets qui sont alors prêts à être reconstitués par passage en friteuse, au four traditionnel ou au four à micro-ondes ou par une remise en température.
