The present invention provides a process for the production of fresh cheese comprising the following steps: (a) mixing milk and isolated soy protein, (b) heating the mixture resulting from (a) to a temperature in the range of from about 70 ~C to about 100 ~C, (c) adding food grade acid to the mixture resulting from (b), and (d) separating the whey and the curd in the mixture resulting from (c).

L'invention concerne un procédé de production de fromage frais comprenant les étapes suivantes consistant: (a) à mélanger du lait et la protéine de soja isolée, (b) à chauffer le mélange résultant de l'étape (a) pour le porter à une température comprise entre environ 70 et environ 100 ·C, (c) à ajouter un acide de qualité alimentaire au mélange résultant de l'étape (b), et (d) à séparer le petit lait et le caillé, à partir du mélange résultant de l'étape (c).
