Thiols, in particular natural thiols, are prepared by bioconversion by putting a cysteine S-complex into contact with a micro-organism which can be used in foods having an enzymatic activity of the beta-C-S-lyase type. The micro-organisms used are preferably yeasts or filamentous fungi. The product obtained may be used in a foodstuff, as it is, in a flavouring composition or as a flavour enhancer.
