ABSTRACT OF THE DISCLOSURE An improved process for preparing Tofu is disclosed, which comprises the steps of subjecting the curd to a crushing treatment that is carried out in the presence of soybean milk, or an aqueous solution of isolated soybean protein, adding a coagulant thereto and coagulating it by heating. The Tofu thus produced is of good texture and has good taste and good springiness.
