(Abstract) A process for preparing a yeast extract by extracting RNA and extract components from RNA-rich yeast cells, decomposing the RNA into nucleotides with 5'-phosphodiesterase, and further treating the same with deaminase, if desired. In this process, viable yeast cells extremely rich in RNA, namely Candida utilis CS-7529 (FERM BP-1656) or Candida utilis CSB-6316 (FERM BP-1657), are employed as the yeast cells, and, an aqueous solution containing said viable yeast cells is preliminarily heated to 80 to 120 °C prior to the decomposition of the RNA into nucleotides. Thus the RNA is decomposed not into 2'- or 3'-nucleotides but exclusively into 5'-nucleotides which would contribute to an excellent flavor. Thus obtained yeast extract rich in highly tasty 5'-GMP and 5'-IMP can applied as a seasoning as such.
