A method for preserving vegetables comprising the steps:- subjecting the vegetables to a heat treatment chosen from the group consisting of: roasting, shallow frying, baking and grilling, immersing the heat-treated vegetables in a preserving liquid, storing the vegetables in the preserving liquid until use, characterized in that the preserving liquid is an aqueous solution containing a preservative agent, a antioxidant, 0.1 - 4.0 wt.% of salt and such amount of an edible acid that the pH of the liquid after 48 hours of equilibration with the immersed vegetables is in the range 4.1 - 4.5.

L'invention concerne un procédé pour conserver des légumes, comprenant les étapes suivantes : soumettre les légumes à un traitement thermique sélectionné parmi les traitements suivants : rôtissage, friture plate, cuisson au four, cuisson au grill ; plonger les légumes ainsi traités dans un liquide de conservation ; et stocker les légumes dans ledit liquide jusqu'à leur utilisation. Ce procédé est caractérisé en ce que le liquide de conservation est une solution aqueuse contenant un conservateur, un antioxydant, 0,1 à 4,0 % en poids de sel et une quantité d'un acide comestible sélectionnée de sorte que le pH du liquide, après 48 heures d'équilibrage avec les légumes marinés, soit situé dans une plage allant de 4,1 à 4,5.
