A process for preparing a practical cholesterol-lowering compound by converting the cholesterol contained in a food or feed to coprostanol having very low intestinal absorption by utilizing an enzymatic action. The content of cholesterol in cholesterol-containing materials such as meat, eggs, milk, fishery products, and cooked and processed foods containing these products, or feed for animals, poultry, fish culture and the like is lowered by treating these materials with three enzymes, i.e., a cholesterol dehydrogenase having an optimal pH value in a neutral pH range and a 4-cholesten-3-one dehydrogenase and a coprostan-3-one dehydrogenase both having an optimal pH value in a weakly acidic range, or cells containing these enzymes to convert cholesterol to coprostanol.

Procédé de préparation d'un composé pratique destiné à baisser le taux de cholestérol. Le procédé est fondé sur la conversion du cholestérol, présent dans une nourriture pour humains ou pour animaux, en coprostanol, caractérisé par une très faible résorption intestinale; la conversion repose sur l'action enzymatique. On baisse le taux du cholestérol présent dans des produits tels que la viande, les oeufs, le lait, les produits de la pêche, et dans des aliments préparés ou cuisinés à base desdits produits, ou dans la nourriture destinée aux animaux ou utilisée en aviculture, en pisciculture, etc., en traitant lesdits produits avec trois enzymes, à savoir une deshydrogénase de cholestérol possédant un pH optimal dans une gamme de pH neutre, une deshydrogénase 4-cholestèn-3-one et une deshydrogénase coprostan-3-one, ces deux dernières possédant un pH optimal dans une gamme de pH faiblement acide, ou avec des cellules comprenant ces trois enzymes, ceci afin de convertir le cholestérol en coprostanol.
