In a process for producing a food product based on meat or proteins of animal-orvegetable origin an emulsion is prepared, as a first step, from base materials by comminuting and emulsifying the base materials. In the next processing step, theemulsion is loaded into a filling device, from which the emulsion then exits in the form of a single strand or numerous parallel strands. In a further step, the strand or the strands of the emulsion is/are cooked. The cooked strands of the emulsion are then cut by a cutting device into shorter strips preferably having a length of a few centimeters and subsequently deep-frozen and packaged.
L'invention porte sur un procédé de fabrication d'un produit alimentaire à base de viande ou de protéines d'origine animale ou végétale, pendant lequel on prépare premièrement une émulsion à partir de matières de base en les fragmentant et en les mettant en émulsion. Puis, l'émulsion est chargée dans un dispositif de remplissage par lequel elle sort ensuite en forme de brin unique ou de plusieurs brins parallèles. Au cours d'une autre étape, le ou les brins de l'émulsion sont cuits, puis coupés par un dispositif de coupage en languettes plus courtes dont la longueur ne dépasse pas de préférence quelques centimètres. Ensuite, les languettes sont surgelées et emballées.
