Disclosed is a process for producing alanylglutamine, which comprises reacting an N-(2-substituted)-propionylglutamine compound represented by the formula (I): (see formula I) where X represents halogen, alkylsulfonyloxy, or substituted or unsubstituted arylsulfonyloxy, with ammonia at a temperature of 60°C or below. In accordance with the present invention, highly purified alanylglutamine can be produced in a high yield, without racemization.
