ABSTRACT The present invention relates to a process for the production of liquid and powdered bifidogenic infant and dietetic foods that are reduced in their antigenicity. The process, according to the invention, is characterized in that to achieve bifidogenicity, sialic acid is cleaved from milk proteins. This cleavage is possible by hydrolysis with hydrochloric acid or a mixture of hydrochloric and phosphoric acid, and optionally with addition of citric acid. Consequently in accordance with the invention it is possible to produce bifidogenic infant foods, particularly suitable for infants, premature and undersized babies, and those parties who cannot tolerate usual milk products. Furthermore the process can be used for production of dietetic food, particularly for patients suffering from intestinal allergies, other allergic diseases and patients with insufficiency of liver and kidney function.
