High concentration of free cells of heterofermentative lactic acid bacteria (LAB) in a resting or slowly growing state are used to convert fructose into mannitol. Efficient volumetric mannitol productivities and mannitol yields from fructose are achieved in a process applying cell-recycle, continuous stirred tank reactor and/or circulation techniques with native LAB cells or with LAB cells with inactivated fructokinase gene(s). Mannitol is recovered in high yield and purity with the aid of evaporation and cooling crystallization.

Des concentrations élevées de cellules libres de bactéries d'acide lactique hétérofermentatif (LAB) dans un état de repos ou de croissance lente sont utilisées pour convertir le fructose en mannitol. Des productivités volumétriques efficaces de mannitol et des rendements de mannitol à partir de glucose sont obtenus dans un procédé mettant en oeuvre un réacteur à réservoir de recyclage de cellules agité en continu et/ou des techniques de circulation avec des cellules LAB natives ou avec des cellules LAB comportant un ou des gènes de fructokinase inactivés. Le mannitol est récupéré à haut rendement et très pur par cristallisation par évaporation et refroidissement.
