The invention provides a process for the production of a fermentable wort from cereal grains, comprising the steps of: (a) liquefaction of cereal material, with the aid of .alpha.-amylase and/or endoprotease activity, to obtain a liquefied mash; (b) saccharification of the said liquefied mash in the presence of .alpha.-amylase; (c) filtration of the liquefied and saccharified mash to obtain a fermentable wort, wherein at least one of the steps (a) and (b) above is carried out in the presence of an enzyme having exo-peptidase activity. Useful as enzymes having exo-peptidase activity are exopeptidases, preferably thermostable exopeptidases, such as the fungal amino-peptidases, but also thermostable carboxy-peptidases are useful. Particularly preferred according to the invention are amino-peptidases endogenous to Aspergillus fungi, more in particular A. niger, A. oryzae or A. sojae.

Procédé de production d'un moût fermentescible à partir de graines de céréales, qui consiste (a) à liquéfier les matières céréalières à l'aide d'une activité .alpha.-amylase et/ou endoprotéase pour obtenir une salade liquéfiée, (b) à saccharifier ladite salade liquéfiée en présence d'.alpha.-amylase et (c) à filtrer la salade liquéfiée et saccharifiée pour obtenir un moût fermentescible, au moins une des étapes (a) et (b) étant effectuée en présence d'une enzyme à activité exo-peptidase. Les enzymes à activité exo-peptidase utiles sont les exopeptidases, de préférence les exopeptidases thermostables, telles que les amino-peptidases fongiques, mais les carboxy-peptidases thermostables sont également utiles. Selon la présente invention, les enzymes particulièrement préférées sont des amino-peptidases endogènes présentes dans des champignons de l'espèce Aspergillus, plus particulièrement A. niger, A. oryzae ou A. sojae.
