Technology for utilizing, as a raw material for food or drink, malt roots having been removed as the cause of odd taste, despite containing nitrogen sources and various active substances in high proportion, in the production of beer or whisky is provided by a process for producing a food or drink characterized in that malt roots of controlled particle size are used as a raw material. In particular, a process for producing a food or drink from malt roots wherein the ratio of particles of less than 150 µm size is 60 wt.% or less. This process for producing a food or drink preferably comprises the steps of immersing malt roots in a liquid so as to leach malt root components with the liquid and, after the leaching, removing the residual malt roots.

L'invention concerne une technique permettant d'utiliser, comme matière première pour des aliments ou des boissons, des racines de malt ayant été éliminées en raison de leur goût bizarre, malgré leur teneur élevée en azote et en diverses substances actives, lors de la production de bière ou de whisky. Cette technique repose sur un procédé de production d'aliments ou de boissons consistant à utiliser comme matière première des racines de malt présentant une taille de particules déterminée. L'invention concerne en particulier un procédé de production d'un aliment ou d'une boisson à partir de racines de malt, caractérisé en ce que la proportion de particules présentant une taille inférieure à 150 mu m est inférieure ou égale à 60 % en poids. Ce procédé consiste de préférence à immerger des racines de malt dans un liquide de façon à dissoudre les composants des racines de malt dans ce liquide, puis à éliminer les résidus de racines de malt.
