A process is disclosed for producing particular hydroxyalkyl glucoside of general formula (I): (see Formula I) by reacting an epoxide with a reducing sugar on the presence of a binary catalyst formed by a strong organic acid and a weak organic base having a Ka volume from 10 -8 -1.
