It is intended to provide a novel process for producing isomaltose and use thereof. Namely, a process for producing isomaltose characterized by comprising treating a saccharide having .alpha.-1,4-glucosyl bond as the binding manner at the non-reducing end and having a degree of glucose polymerization of 2 or more with a-isomaltosyl glucosaccharide synthase in the absence or presence of a-isomaltosyl transferase to thereby synthesize .alpha.- isomaltosyl glucosacharide having .alpha.-1,6-glucosyl bond as the binding manner at the non-reducing end and .alpha.-1,4-glucosyl bond as the binding manner other than at the non-reducing end and having a degree of glucose polymerization of 3 or more and/or cyclo{.fwdarw.6)-.alpha.-D-glucopyranosyl- (1.fwdarw.3)-.alpha.-D-glucopyranosyl-(1.fwdarw.6)-.alpha.-D-glucopyranosyl- (1.fwdarw.3)-.alpha.-D-glucopyranosyl-(1.fwdarw.}, then treating the product(s) with isomaltose-releasing enzyme, and collecting the thus formed isomaltose.

La présente invention concerne un nouveau processus de production d'isomaltose et l'utilisation de celui-ci. Plus précisément, cette invention concerne un processus de production d'isomaltose qui consiste à traiter un saccharide possédant une liaison .alpha.-1,4-glucosyle destinée à la fixation à l'extrémité non réductrice et possédant un degré de polymérisation de glucose d'au moins 2 avec .alpha.-isomaltosyle glucosaccharide synthase en l'absence ou en présence d'.alpha.-isomaltosyle transférase de façon à synthétiser ainsi .alpha.-isomaltosyle glucosaccharide possédant une liaison .alpha.-1, 6-glucosyle destinée à la fixation à l'extrémité non réductrice et une liaison .alpha.-1,4-glucosyle destinée à la fixation à une partie différente de l'extrémité réductrice et possédant un degré de polymérisation du glucose d'au moins 3 et/ou cyclo( 6)-.alpha.-D-glucopyranosyl-(1 3)-.alpha.-D-glucopyranosyl-(1 ), puis à traiter le(s) produit(s) avec une enzyme libérant de l'isomaltose et à recueillir l'isomaltose ainsi formé.
