La présente invention concerne un procédé de production d'acide itaconique par fermentation au moyen de microorganismes d'un milieu nutritif aqueux contenant de l'amidon comme source de carbone assimilable, caractérisé en ce que la fermentation est conduite en présence additionnelle d'au moins une enzyme amylolytique saccharifiante. Ce procédé définit un procédé de fermentation économique utilisant l'amidon comme source de carbone nutritive et ayant une productivité au moins égale à celle obtenue avec le glucose ou les hydrolysats d'amidon riches en glucose.
