A process for efficiently producing L-allysine acetals in short steps, which comprises reacting a D,L-allysine acetal of general formula: (1) (wherein R1 and R2 are the same or different from each other and each represents an alkyl group of 1 to 8 carbon atoms, or R1 and R2 together form a ring to represent an alkylene group having 2 to 8 carbon atoms) in the presence of an enzyme having the activity for sterically selectively and oxidatively deaminating D- amino acids to convert the D,L-allysine acetal into a mixture of a 2-oxo-6,6- dialkoxyhexanoic acid of general formula (2) (wherein R1 and R2 are each as defined above) with an L-allysine acetal of general formula (3) (wherein R1 and R2 are each as defined above) and then recovering the L-allysine acetal.

L'invention concerne un procédé de préparation efficace d'acétals de L-allysine en étapes courtes, qui consiste à faire réagir un acétal de D,L-allysine de formule générale (1) (où R?1¿ et R?2¿ sont identiques ou différents et représentent chacun un groupe alkyle ayant entre 1 à 8 atomes de carbone, ou bien où R?1¿ et R?2¿ forment conjointement un anneau pour représenter un groupe alkylène ayant entre 2 à 8 atomes de carbone) en présence d'une enzyme apte à produire une désamination stérique sélective et oxydative des acides D-aminés, de manière à convertir l'acétal de D,L-allysine en un mélange d'acide 2-oxo-6,6-dialcoxyhexanoïque de formule générale (2) (où R?1¿ et R?2¿ ont chacun la signification précitée) et d'acétal de L-allysine de formule générale (3) (où R?1¿ et R?2¿ ont chacun la signification précitée), puis à récupérer l'acétal de L-allysine.
