ABSTRACT L-phenylalanine useful as a sweetening agent is produced from cinnamic acid and ammonia in the presence of a microorganism of a genus selected from the group consisting of Geotrichum, Moniliella, Syncephalastrum, Endomyces, Aspergillus, Saccharomycopsis, Eurotium, Glomerella, Fel- licularia and Gonatobotryum; use of microorganisms in accordance with the invention permits the use of higher con- centrations of cinnamic acid and thus higher concentrations of L-phenylalanine can be produced.
