A process for producing saccharide, including saccharifying decrystallized cellulose prepared from a raw material containing cellulose having cellulose 1-type crystallinity of more than 33%, the process including: treating the cellulose-containing raw material by means of a mill to reduce the cellulose 1-type crystallinity of the cellulose to 33% or less, wherein the cellulose-containing raw material has a cellulose content of a residue obtained by removing water from the cellulose-containing raw material of 20% by weight or more, to thereby prepare decrystallized cellulose, and causing a cellulase and/or a hemicellulase to act on the decrystallized cellulose.

La présente invention concerne un procédé de production de saccharide, comprenant l'étape consistant à saccharifier de la cellulose décristallisée préparée à partir d'une substance brute contenant de la cellulose ayant une cristallinité de cellulose de type I de plus de 33 %, le procédé comprenant les étapes consistant à : traiter la substance brute contenant de la cellulose au moyen d'un broyeur afin de réduire la cristallinité de cellulose de type I de la cellulose à 33 % ou moins, la substance brute contenant de la cellulose ayant une teneur en cellulose d'un résidu obtenu par élimination de l'eau de la substance brute contenant de la cellulose supérieure ou égale à 20 % en poids, pour préparer ainsi de la cellulose décristallisée; et provoquer l'action d'une cellulase et/ou d'une hémicellulase sur la cellulose décristallisée.
