ABSTRACT Roasted and ground coffee may be extracted by a countercurrent multistage slurry extraction system to produce a coffee extract of 10 to 30% concentration at yields above 40%. The roasted and ground coffee is preferably finely ground and thus fines from conventional screening operations and presscake from which oil has been expelled and recovered can be readily processed as the feed material in the countercurrent slurry extraction. The concentrated extract may be dried by con- ventional methods to obtain a dry soluble coffee beverage product having desirable taste and aroma constituents. -1-
