ABSTRACT OF THE DISCLOSURE A process for producing soybean milk without unde- sirable beany flavour or bitterness which comprises cooking unsoaked green soybeans in an aqueous medium, grinding the cooked soybeans while bringing them into contact with aqueous sodium bicarbonate solution, extracting water-soluble compo- nents, particularly, protein from the ground soybeans and removing the solid residue is disclosed.
