ABSTRACT OF THE DISCLOSURE A process is disclosed for producing a stable vitamin C product. The process comprising mixing specified amounts of vitamin C with an edible, liquefied, fatty material having the formula: Image wherein R1 is an acyl radical derived from a saturated aliphatic acid having between 12 and 20 atoms per molecule and R2 and R3 are hydrogen or the same as R1, with the fatty material having a melting point of from 100°F. to 200°F.; mixing the mixture of vitamin C and fatty material with a nontoxic cooling agent which is chemically inert with respect to the vitamin C and fatty ma- terial, with the cooling agent having a temperature below 32°F., and with said mixing being sufficient to solidify the fatty ma- terial throughout the remainder of the process; subdividing the mixture until a major portion thereof passes through a No. 20 U.S. Sieve screen but has a particle size greater than about 75 microns; and removing the cooling material therefrom by sublima- tion or evaporation.
