The present invention relates to a process for the production of polyunsaturated fatty acid and micronutrient rich zero-trans shortening by chemical interesterification to produce nutritionally and fictionally superior shortening without hydrogenation, the process involving blending of palm oat and palm stearin with rice bran oil, interesterification in the presence of sodium methoxide catalyst, inactivation of the catalyst, washing with hot water, deodorization of the resultant product, and finally passing the interesterified product through margarine crystallizer under controlled conditions followed by packing and tempering.

L'invention concerne un procédé pour produire un acide gras polyinsaturé et de la graisse végétale sans acides gras trans, riche en micronutriments, par une interestérification chimique pour produire de la graisse végétale nutritionnellement supérieure sans hydrogénation. Le procédé de l'invention consiste à mélanger de l'huile de palme et de la stéarine de palme à de l'huile de son de riz, à effectuer une interestérification en présence d'un catalyseur de méthoxyde de sodium, à inactiver ce catalyseur, à effectuer un lavage avec de l'eau chaude, à désodoriser le produit obtenu, et enfin à faire passer le produit interestérifié dans un cristalliseur de margarine, dans des conditions contrôlées, puis à effectuer un tassage et un malaxage.
