ABSTRACT The present invention has as its subject a pro- cess for proteolysis of plasma proteins which enables hydrolyzates without a bitter flavor to be obtained, wherein the proteolysis of plasma proteins is performed by thermolysin in the presence of calcium ions in an aqueous reaction medium of pH from 5 to 7 at a temperature below or equal to 80°C.
