An aqueous solution containing valine is reacted with p-isopropylbenzenesulfonic acid or a water-soluble salt thereof to form valine p-isopropylbenzenesulfonate crystals. The valine p-isopropylbenzenesulfonate crystals are separated from the solution and the valine p-isopropylbenzenesulfonate is then dissociated to obtain valine having a high purity. Since the solubility of valine p-isopropylbenzenesulfonate is low, valine can be obtained in high yield. The valine p-isopropylbenzenesulfonate in crystal form obtained in the process of the invention and comprising 1 mole of valine and 1 mole of p-isopropylbenzenesulfonic acid represents a novel product.
