PROCESS FOR RECOVERY OF AROMA . ABSTRACT A process for the treatment of an aqueous coffee extract wherein the extract is subjected to concentration by evaporation and the vapors resulting from said concentration are condensed to form an aqueous liquid. The aqueous liquid is passed through an adsorbent comprised of non-ionogenic macroreticular cross-linked resin particles to adsorb aroma volatiles. Preferably, the resin is a divinylbenzene polymer and the aroma volatiles are desorbed from the resin particles with steam as the desorbent. The aroma volatiles which are recovered are added to the concentrated extract which may then be dried.
