The process for reducing sterols and free fatty acids from animal fat entails forming an oil-in-water emulsion using a mixing device such as a pump or an inline mixer; and then pumping the emulsion through a conduit for a period of time. The emulsion is made from water, liquefied animal fat and cyclodextrin. The mixing device forms the emulsion in less than one minute; and the emulsion is pumped through the conduit for 5 to 60 minutes. During the time that the emulsion is moving through the conduit, the sterols and free fatty acids move from the fat phase to the water phase and form complexes with the cyclodextrin. These complexes are fairly stable and can be separated from the emulsion by centrifugation. The resulting fat has a reduced sterol and free fatty acid content.

Ce procédé, qui permet d'abaisser la teneur en stérols et en acides gras libres des graisses animales, consiste à former une émulsion aqueuse à l'aide d'un dispositif mélangeur telle qu'une pompe ou un mélangeur placé sur un conduit, puis à pomper cette émulsion au travers du conduit pendant une durée donnée. Cette émulsion comprend de l'eau, des graisses animales liquéfiées et une cyclodextrine. Le dispositif de mélange forme l'émulsion en moins d'une minute et celle-ci est pompée au travers du conduit pendant 5 à 60 minutes, durée pendant laquelle les stérols et les acides gras libres passent de la phase grasse à la phase acqueuse et forment des complexes avec la cyclodextrine. Relativement stables, ces complexes peuvent être séparés de l'émulsion par centrifugation. La graisse résultante présente une teneur réduite en stérols et en acides gras libres.
