ABSTRACT Described is a process for the removal of sterols, in particular cholesterol, from, or, respectively, the enrichment of sterols in vegetable and animal fat, in which the sterol-containing fat is mixed with a mixture consisting of a hydrocarbon, a water miscible solvent and water. The two phases forming are then separated to give a hydrocarbon-enriched phase containing substantially the fat essentially freed from the sterol(s) and an alcohol-enriched phase containing the dissolved sterol(s). The process is preferably carried out continuously in a countercurrent.
