A process for separating caffeine from an aqueous raw coffee extract by means of gel chromatography is described, in which simultaneously the chlorogenicacids can be separated if desired. The inventive process makes it possible to obtain in a simple manner decaffeinated coffee, optionally with a reduced chlorgenic acid content.
