The invention relates to a process for solidifying the surface of raw sausage emulsion using ultrasound treat- ment and/or an adhesion-minimizing microstructure on the sonotrode interior surface while it is being trans- ported, with, in the course of a continuous process, a substantial degassing of the raw product first being carried out. Subsequently, there is a direct contacting of the raw product with the surface of one or more ultrasonic sonotrodes, at least one of the ultrasonic sonotrodes being heated. As a result of the treatment, a thin, sealed, shape-stabilizing independent coagulation skin forms on the surface of the raw product. The ultrasonic energy is in the low frequency range, but has a high vibrational amplitude.

L'invention concerne un procédé permettant de rigidifier la surface d'une masse de chair à saucisse brute par traitement par ultrasons et/ou à l'aide d'une microstructure minimisant l'adhérence, se trouvant sur la surface intérieure des sonotrodes, ledit traitement se faisant pendant l'avancement de ladite masse de chair à saucisse et, au cours d'un processus continu, le produit brut étant d'abord soumis à un dégazage important. Ensuite, le produit brut est mis en contact avec la surface d'une ou de plusieurs sonotrodes à ultrasons, au moins une des ces sonotrodes étant chauffée. Grâce à ce traitement, il se forme, sur la surface du produit brut, une peau naturelle, mince, compacte, stabilisant la forme du produit qui résulte de la coagulation. L'énergie ultrasonore, qui est comprise dans la plage des basses fréquences, présente toutefois une amplitude d'oscillation élevée.
