A process for preparing esterified polyol fatty acid polyesters is provided, where the polyol has n hydroxyl groups. The process provides for independent control of the level of fully esterified polyols, on the one hand, and the level of n-3 and lower esters, on the other hand. The process is especially suited for preparing sucrose polyester, wherein the process provides for independent control of the level of octaesters, on the one hand, and penta and lower level esters, on the other hand. The process can be used to reduce the level of undesirable reaction byproducts, such as difatty ketone and beta ketoester.
La présente invention concerne un procédé permettant l'élaboration de polyesters d'acides gras de polyols estérifiés, pour des polyols comportant n groupes hydroxyles. Le procédé permet d'agir de façon indépendante, d'une part sur le niveau de polyols estérifiés, et d'autre part sur le niveau d'esters de type n-3 et inférieurs. Ce procédé convient particulièrement à l'élaboration de polyesters de sucrose, auquel cas, le procédé permet d'agir de façon indépendante, d'une part sur le niveau des octa-esters, et d'autre part sur les niveaux des penta-esters et inférieurs. Le procédé permet également de réduire le niveau des sous-produits de réaction non souhaités tels que les cétones di-grasses et les beta -céto-esters.
