ABSTRACT L-malic acid can be produced in a nutrient-free solution or suspension and at a concentration of 170 to 400 g per litre, and greater yields can be achieved, by biotechnical conversion from fumaric acid neutralized with ammonium hydroxide. By this means it is possible to obtain pure L- malic acid of a quality that is suitable for foodstuffs and pharmaceuticals, and to do so with greater productivity and in an economical manner. The fermentation process is carried out in simple vessels under non-aseptic conditions. The rate of conversion of the fumarate and the concentration of the L-malate that can be achieved are promoted by ammonia ions./
