ABSTRACT Extraction of lactones from a lipid material, by contacting a medium, having a temperature near its critical temperature and a pressure near its critical pressure with the lipid material, and subsequently removing the medium, wherein the medium, upon contacting, has a temperature T (in °C), and pressure P (in bar), such that: -25 <= T* <= 18.5; -40 <= P* <= 300; and T*xP* <= 1900, where T* = T-Tc, P* = P-Pc, Tc is the critical temperature (in °c), and Pc is the critical pressure (in bar) of said medium. Under these conditions a low yield and a high selectivity are obtained, resulting in a relatively small extracted fraction, which is substantially enriched in lactones. Another aspect is the use of an extract obtained by the above process for flavouring foodstuffs.
