A process is provided for the manufacture of a tea product which is readily infusible and has improved red colour. The process comprises contacting black tea with ascorbic acid and/or its salts, an oxidizing agent and water for a period of at least 5 minutes followed by drying to prepare a tea product that is infusible in water at 5 to 100oC.

L'invention concerne un procédé pour fabriquer un produit à base de thé, pouvant s'infuser et présentant une couleur rouge améliorée. Ledit procédé comprend la mise en contact de thé noir avec de l'acide ascorbique et/ou un de ses sels, un agent d'oxydation et de l'eau pendant au moins 5 minutes puis le séchage, de manière à préparer un produit à base de thé pouvant être infusé dans l'eau à une température comprise entre 5 et 100·C.
