A B S T R A C T A process for the manufacture of compounds of the general formula Image (I) , wherein R represents a C1-6 alkyl group, which process comprises oxidising a compound of the general formula Image (II) , wherein R has the significance given, to give a hydroperoxide of the general formula Image (III) , wherein R has the significance given, and subsequently reducing a hydro- peroxide of formula III to give a compound of formula I. These compounds find use in the brewing industry, for example in the flavouring of beer.
