The present invention describes a process wherein toxic and/or off-flavoured compounds are modified upon hydrolysis with a single enzyme. The modification results in a reduction of the toxicity and/or off-flavour of said compounds. The toxic and/or off-flavoured compounds preferably originate from Solanaceae and are glycosides. The enzyme cleaves said compounds at the covalent bond between the aglycone and the glycosidic part. More preferably the enzyme has an alpha-chaconinase activity, degrades alpha-chaconine to liberate the solanidine aglycone and a trisaccharide and originates from Aspergillus niger. The enzymatic hydrolysis of the invention can be applied in, for instance, the recovery of protein from potato fruitwater after separation of the starch granules.

La présente invention concerne un procédé de modification des composés toxiques et/ou à flaveurs atypiques par hydrolyse au moyen d'une seule enzyme. Cette modification permet de réduire la toxicité et/ou la flaveur de ces composés. Ces composés toxiques et/ou à flaveur atypique, qui provienennt des Solanaceae, sont des glucosides. L'enzyme a pour effet de cliver ces composés au niveau de la liaison covalente entre l'aglycone et la partie glucoside. De préférence, l'enzyme utilisée est tirée d'Aspergillus niger et son activité alpha-chaconinase dégrade l'alpha-chaconine libérant ainsi l'aglycone de solanidine et un trisaccharide. L'hydrolyse enzymatique de l'invention convient particulièrement, par exemple, pour extraire dans l'eau de végétation de la pomme de terre des protéines après séparation des grains d'amidon.
