2-(1-alkoxyethenyl)-1-pyrroline compounds are useful in food flavorant compositions. 2-acetyl-1-pyrroline is prepared by hydrolyzing a 2-(1-alkoxyethenyl)-1-pyrroline compound with an acid and neutralizing the reaction medium with an equimolar amount of a base to obtain a neutralized reaction medium containing the 2-acetyl-1-pyrroline. A cyclodextrin and/or maltodextrin support material is added to the neutralized medium which is then freeze-dried to isolate the 2-acetyl-1-pyrroline with the support to obtain the 2-acetyl-1-pyrroline incorporated with the support material. A powder-form composition of 2-acetyl-1-pyrroline incorporated with a support of maltodextrin and/or cyclodextrin is also disclosed.

La 2-(1-alcoxyéthényl)-1-pyrroline est utile dans les compositions pour aromatiser les aliments. La 2-acétyl-1-pyrroline est préparée par hydrolyse de la 2-(1-alcoxyéthényl)-pyrroline avec un acide, suivie de la neutralisation du milieu de réaction avec une quantité équimolaire d'une base pour obtenir un milieu de réaction neutralisé contenant la 2-acétyl-1-pyrroline. Une cyclodextrine et/ou une maltodextrine est ajoutée comme matériau de support au milieu neutralisé qui est alors séché à froid pour isoler la 2-acétyl-1-pyrroline avec le support, cette dernière étant alors incorporée au support. Une composition de 2-acétyl-1-pyrroline en poudre incorporée au support de maltodextrine et/ou de cyclodextrine est également dévoilée.
