PROCESS FOR THE PREPARATION OF A LOW-GLUCOSE DIGESTION PRODUCT FROM INULIN-CONTAINING PARTS OF PLANTS ABSTRACT Process for the preparation of a low-glucose digestion product from inulin-containing parts of plants, the parts of plants being comminuted, and the inulin being degraded to fructose or fructose oligomers. The process comprises a suspension of the comminuted parts of plants in an aqueous medium, or a pressed juice or extract obtained therefrom, being heated, without removal of the inulin, at temperatures up to 100°C, until the enzymes intrinsic to the plant have substantially been inactivated, whereupon, after cooling, inulinase is added to the suspension or the pressed juice or the extract.
