Selon ce procédé, des compositions aqueuses contenant un polysaccharide tel que la gomme Xanthane sont acidifiées par l'acide nitrique puis traitées à la chaleur. On obtient ainsi des polysaccharides modifiés dont les compositions aqueuses ont une filtrabilité améliorée. Ces polysaccharides modifiés sont notamment utilisables comme additif viscosifi- ant dans les industries requérant des produits clarifiés, notamment pour la récupération assistée du pétrole.
