Process for the preparation of a spreadable edible dispersion wherein a mixture of oil and solid structuring agent particles is subjected to stirring and an aqueous phase and/or solid phase is gradually added to the mixture until a dispersion of the desired oil content is obtained, wherein the solid structuring agent particles have a microporous structure of submicron size particles and comprise sterol.

La présente invention se rapporte à un procédé de préparation d'une dispersion comestible à tartiner, selon lequel un mélange d~huile et de particules solides d~agent structurant est soumis à agitation tandis qu'une phase aqueuse et/ou solide est progressivement ajoutée au mélange jusqu~à obtention d~une dispersion ayant la teneur souhaitée en huile ; les particules solides d~agent structurant ont une structure microporeuse formée de particules de taille inférieure au micron et comprennent du stérol.
